Scottish chef Seumas fuses robust Mediterranean and Asian ingredients together using a range of street-food cooking methods (char-grilling is a favourite) for a unique dining experience. Recommended dishes include bone marrow with ortiz anchovy and garlic on sourdough, bacon-wrapped chargrilled dates with aioli and pine nuts, and slow-cooked pork belly with apple roast turnips and cavalo nero.
