Jin is a Japanese concept-dining restaurant on Telok Ayer Street on Far East Square in Singapore. Secretly nestled in the AMOY Hotel, a high-end Japanese dining experience in a dark-wood, red table- topped dining room reminiscent of an Eastern-version of something from Blade Runner, only with loads more daylight. AMOY hotel on Far East Square has retained the freshness of the ingredients through its
minimally-invasive preparation techniques and in its cooking.
Jin is serving
up beautifully salted plates of seafood to AMOY hotel guests and wowing Singaporeans with dishes
like sweet shrimps and scallops, served up with red caviar and a generous helping of wasabi, as well as
lobster sashimi and maguro and salmon. Each dish is prepared simply and the flavours are allowed to
speak for themselves. Headed by Japanese cuisine superstar Thomas Kok, a man whose CV reads like a
who’s-who of every restaurants in Singapore and with more than of 30 years’ experience in the kitchen, a
